Salep is a flour made from the tubers of the orchid genus Orchis. These tubers contain a nutritious, starchy polysaccharide called glucomannan.

Salep flour is consumed in beverages and desserts, especially in places that were formerly part of the Ottoman Empire.

Ingredients:

1 tbsp salep flour or wheat starch

4 cups whole milk

2 tbsp sugar

cinnamon for garnish

Preparation:

Mix the 'salep' flour together with the sugar in a small kettle or saucepan. Add the milk and stir slowly until the sugar dissolves.
 
Stir the mixture constantly at scalding temperature until very thick, about 10 minutes.
 
Then, pour it into mugs and also sprinkle the top of each with the cinnamon.
