Livno cheese or Livanjski sir a dry yellow cheese from the west Bosnian town of Livno and surrounding villages. 

The Livno cheese is a cheese initially made in the 19th century in the Livno in Bosnia and Herzegovina. 

Primarly, it was made from the milk of sheep.  Today, it is principally made from a melange of sheep's as well as cow's milk. 

The  period of ripening is between 60 and 66 days in a guided surroundings. All in all, the flavor is robust, and in more aged cheeses the taste is slightly tangy.
