Popular dessert found in the cuisines of the quondam Ottoman Empire is „tulumba“. It is a fried batter soaked in syrup.

This sweet is also established in Iranian cuisine as bamiyeh as well as in Egypt „balah ash sham“. In the world of Arabs, it is called asabe Zainab or Zainab's fingers. It is usually consumed during Ramadan.

It is made from unleavened dough lump, given a small ovoid shape with ridges along it using an "icing" bag with a special nozzle. It is first fried, and after that, sweet syrup of sugar is poured over it. It is eaten cold.
